The watermelon asked his girlfriend, “Honeydew you want to get married?” The girlfriend says, “Oh yes! But we cantaloupe.” Sorry, I couldn’t resist starting this one off with a little melon humor.

This chilled honeydew and peach soup is super easy, healthy and so refreshing! You can serve it as a starter for an elegant meal, or use it as a palate cleanser during dinner on hot summer nights.

Here’s the ingredients. While the base is formed by the marriage of the honeydew and peaches, the key to this soup is the wine. I recommend a Riesling, for its sweetness and high acidity, but you can substitute your favorite wine in its place. Just adjust the amount of sugar to compensate.

This soup couldn’t be easier to make. Just throw everything into a food processor or blender and puree until smooth. Depending on the wine you use and how ripe the fruit is, you might need to add a bit more sugar. I like to add the tiniest pinch of salt to mine.

Pour the puree through a wire mesh strainer and refrigerate for a couple of hours. 

When you are ready to serve, pour into bowls and garnish with fresh mint leaves to fancy it up. Enjoy!

Honeydew melon and peaches combine to form the base of this refreshing chilled summer soup.

Ingredients

  • 1/2 honeydew melon
  • 2 peaches
  • zest of one orange
  • 1/2 teaspoon fresh ginger
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 1/2 Riesling wine
  • salt

Instructions

  • Peel and chop melon and peaches and place in food processor.
  • Add orange zest, ginger, lemon juice, sugar and wine.
  • Puree until smooth. Add sugar and the tiniest pinch of salt if necessary.
  • Pour through wire mesh strainer and refrigerate.
  • When ready to serve, garnish with fresh mint leaves.
