I’m not sure why this recipe is called Cowboy Coffee Cake. My Grandma wasn’t married to a cowboy and she most likely didn’t even know any cowboys. But as far back as I can remember, she always made this delicious old fashioned coffee cake every Christmas morning. We always called it baby Jesus’s birthday cake. She sometimes made it on other days of the year too, as it always goes well with a cup of coffee or tea.

This classic coffee cake is delicious enough for special occasions, but easy enough to make any day of the week. So let’s get to it.

Here’s the ingredients. Nothing special here, but what a special coffee cake they will make.   

Step one is to put the flour, brown sugar and sugar in a large mixing bowl.  

Use a whisk to combine thoroughly.

Cut the butter (that hopefully you took out of the fridge the night before) into small pieces and add to the dry ingredients. Use your fingers to incorporate the butter until it resembles fine crumbs. No worries if it’s not perfectly uniform.

Remove 1 cup of the mixture and set aside. We’ll use it later for the crumb topping.

Next add the eggs, buttermilk and soda. Mix with a spatula until everything is incorporated. Don’t overmix.

A little butter on the pan will make it easier to remove later.

Pour the batter in the buttered pan and smooth with it out with a spatula.

Sprinkle the reserved crumb topping evenly over the top and in the oven it goes.

Bake for 40 to 45 minutes at 350°. When a toothpick inserted into the center comes out clean, it’s done. Let the coffee cake cool for at least 30 minutes on a wire rack.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup unsalted butter softened
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • In a large mixing bowl, whisk together flour, brown sugar and sugar.
  • Cut the softened butter into small pieces and use your fingers to mix until it resembles fine crumbs.
  • Remove 1 cup of the mixture and set aside.
  • Stir in buttermilk, eggs, soda and salt.
  • Pour batter into pre buttered 9 x 9 pan.
  • Sprinkle reserved crumb mixture evenly over the top.
  • Bake at 350° for 40 to 45 minutes, until a toothpick inserted in the center comes out clean.
  • Remove from oven and cool on wire rack for at least 30minutes.
