Strawberry season brings me back to so many fond memories. As a child, the best part was going to pick those beautiful berries on a sunny Saturday and then sampling them as I picked. Sometimes I think I probably ate more than I ended up with in my pail. My Grandma would tell me that if I filled my pail, there would be enough strawberries for a scrumptious dessert. Lucky for me, my pail was a lot smaller than Grandma’s.        

One of my favorite recipes made with strawberries is Frosty Strawberry Dessert. Truth be told, my family likes it so much we even have it during Christmas time. Whether it is cold and snowy or hot and humid, this dessert is one that will be enjoyed anytime.

The best of ingredients starts with the freshest strawberries.

The ingredients you will need to make this dessert of deliciousness is flour, brown sugar, walnuts, butter, eggs, granulated sugar, fresh lemon juice, whipped cream and of course fresh strawberries.

Start out by making the walnut crust. This requires a little baking not enough to heat your house up – especially in the summer months. 

In a medium size bowl, combine the flour, melted butter and walnuts. Use the back of a fork or your fingers to evenly coat the flour and walnuts with the butter. If you do not like walnuts, you can omit them and add 2 extra tablespoons of flour.

Once the walnut ingredients are mixed, spread it out evenly into a baking dish and bake for 15 minutes at 350°. Halfway through, stir and break up the mixture. When it is done baking, set aside and allow it to cool.

In a large bowl, add egg whites, sugar, fresh lemon juice and the strawberries that have been cut into small pieces. Use a hand mixer to combine everything together on high speed for 10 minutes, or when stiff peaks form. Using a hand mixer allows everything to get blended evenly and gives you more control when all the ingredients start to get light and airy. 

Whip the cream in a small bowl. To decrease the time whipping the cream, put the bowl in the freezer for a half an hour before. Gently fold in the whipped cream and it’s ready to assemble.

First cover the bottoms of your serving dishes with a layer of the walnut crust. Cover with the strawberry mixture and then add another layer of walnuts. Add more strawberry. Top it off with the remaining walnuts and freeze for 6 hours. Take out the dessert 10 minutes before serving and add a fresh strawberry on the top.

Ingredients

  • 2 cups fresh strawberries diced
  • 2 egg whites
  • 2 tablespoons lemon juice
  • 1 cup granulated sugar
  • 1 cup whipping cream
  • 1 cup all purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup walnuts finely chopped
  • 1/2 cup unsalted butter melted

Instructions

  • Preheat oven to 350° F.
  • In a medium size bowl, combine flour, melted butter, brown sugar and chopped walnuts.
  • Sprinkle into a baking dish and bake 15 minutes. Set aside to cool.
  • In a large bowl with a hand mixer, combine egg whites, lemon juice, diced strawberries and sugar. Beat on high speed for 10 minutes or until stiff peaks form.
  • Whip the cream in a small bowl until peaks form.
  • Fold whipped cream into strawberry mixture.
  • Assemble desserts by sprinkling walnut crust on the bottom of serving container, add a layer of strawberry mixture, and repeat. Sprinkle the remaining walnuts on the top and freeze for 6 hours.
