I sometimes wonder if whoever invented meatloaf knew that it is undoubtedly the all-time best entre for left overs. It’s one of the few things that might actually be better the next day – not to say that it isn’t fantastic the first day either.

You can of course make great meatloaf in the oven, but cooking on the smoker elevates the flavor another notch. My favorite way is to make mini meatloaves (or is it mini meatloafs?) so you’ll get ever more smoke flavor on account of more surface area. And as an added benefit, the minis just happen to be the perfect size for a meatloaf sandwich the next day. So let’s get to it – here is: The Best Smoked Meatloaf Recipe.

Here’s the all-star lineup of ingredients.     

Step one is to put the dry ingredients in a mixing bowl. I love the combination of the gluten free breadcrumbs and the Irish oatmeal. If you can’t find Irish oatmeal, feel free to substitute any quick cooking oatmeal.

Add the egg, milk and parmesan cheese. Whisk until everything is combined.

Now it’s time for the hamburger. For this meatloaf recipe, I recommend using ground sirloin (90/10). There’s no better tool than your hands to mix up the meatloaf. Mix until everything is incorporated.

At this point you could form it into one loaf or use a 1/3 cup measuring cup to divide it up into six mini meatloaves. Roll and form into patties and place into a 9” x 13” disposable foil pan.

In a new mixing bowl, whisk together the ketchup, brown sugar and mustard. Top the loaves and put in the preheated smoker at 350°. Cooking time should be around 40 minutes.

There are done when the internal temperature hits 165°. Remove from the smoker, tent with aluminum foil and let rest 5 minutes before serving.

Serve with a side of mashed potatoes. The ultimate comfort food.

Ingredients

  • 1 pound ground beef
  • 1/4 cup gluten free breadcrumbs
  • 1/4 cup Irish oatmeal
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup parmesan cheese shredded
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

  • In a large mixing bowl, combine breadcrumbs, oatmeal, garlic powder, onion powder, salt and pepper.
  • Add egg, milk and parmesan cheese. Whisk thoroughly.
  • Add ground beef and mix until combined. Use 1/3 cup measuring cup to divide into 6 equal portions. Form and shape into mini loaves.
  • Place meatloaves in a 9” x 13” disposable foil pan. Whisk together ketchup, brown sugar and mustard. Top meatloaves with ketchup mixture and cook uncovered in a preheated smoker at 350°, about 40 minutes, until an instant read thermometer reads 165°.
  • Remove from smoker, cover and let rest for 5 minutes before serving.
