I sometimes wonder if whoever invented meatloaf knew that it is undoubtedly the all-time best entre for left overs. It’s one of the few things that might actually be better the next day – not to say that it isn’t fantastic the first day either.
You can of course make great meatloaf in the oven, but cooking on the smoker elevates the flavor another notch. My favorite way is to make mini meatloaves (or is it mini meatloafs?) so you’ll get ever more smoke flavor on account of more surface area.
