Chilled Honeydew and Peach Soup
Honeydew melon and peaches combine to form the base of this refreshing chilled summer soup.
- 1/2 honeydew melon
- 2 peaches
- zest of one orange
- 1/2 teaspoon fresh ginger
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1/2 Riesling wine
Peel and chop melon and peaches and place in food processor.
Add orange zest, ginger, lemon juice, sugar and wine.
Puree until smooth. Add sugar and the tiniest pinch of salt if necessary.
Pour through wire mesh strainer and refrigerate.
When ready to serve, garnish with fresh mint leaves.
